The ”Società Agricola Simone” that first patented the brand “Zafferano del Sebino” produces saffron pistils at “Ai Bossolà” in Clusane D’Iseo. It does not use any chemical weed-killers or fertilisers whatsoever but prefers using the “Green Manure” technique, which involves rotating the crops on two pieces of land so that one is left to rest for a year. It then goes on to the handpicking of the pistils separating them from the flowers and finishes with the a low temperature drying process. This precious spice has been used since ancient times and has beneficial effects on our health.
