Valcalepio Rosso Doc
Valcalepio Rosso Doc is composed of a blend of a variable percentage (25-60%) of Cabernet Sauvignon and of Merlot. The grapes are vinified pure, that is to say, they are harvested and reach fermentation separately. Considering the different maturation periods of these two varieties, this method allows the producers to harvest each variety at its best. Then there is a cold “bordolese” blend following the Consorzio set of rules. Next phase is the ageing one, at least 12 months and six of these in bay oak barrels.
When the wine reaches an ageing period of more than three years it, can carry the name Riserva . Another relevant phase in the final quality of the wine is the in-bottle ageing period consisting of one to two years. It is this ageing period that conferes to the wine its sensorial complexity.
Its colour is ruby red with pomegranade nuances. Its perfume is ethereous, intense and pleasurefull. Its taste is dry, full, persistent and armonic with sour black cherry. The sugar percentage is of 11,5%. The Valcalepio Rosso Doc couples perfectly to roasted red and white meats. The ideal temperature to serve it is 18 ° C.
