La Bottega del Colmetto
Il Colmetto is a farm in Rodengo Saiano, Franciacorta. Here, on an area of 30 hectares, there are: a farm-meets-kitchen restaurant; greenhouses and fields for self-production of vegetables, fruit and cereals; a stable for breeding dairy goats and a cheese factory.
Our assortment includes seasoned and fresh cheeses. The ‘standard-bearer’ is Colmetto, one of the ‘Eccellenze 2022’ at the regional competition ‘All’ombra della Madonnina’. Another speciality is Cuordi, a cheese filled with chestnut cream, awarded ‘Best flavoured cheese in Italy‘ at the Italian Cheese Awards 2022. Then there is our ricotta, produced in a completely natural way, by heating the whey ‘discarded’ from cheese processing, without adding other ingredients. Finally, we also produce yoghurt and delicious puddings, made with goat’s milk.
All our dairy products, made from the milk of our goats, are available in the ‘Bottega del Colmetto’, a small shop on our farm.
