The EVO DOP “Laghi Lombardi” that might have the mention “Sebino” or “Lario” is produced in the territories of 93 municipalities in the provinces of Brescia, Bergamo, Como and Lecco.
The oil with mention “Sebino” is produced in the territories of 48 municipalities in the provinces of Brescia and Bergamo in every phase of the production chain, with olives of variety Leccino (at least 40%), Frantoio, Pendolino and Casaliva, Sbresa. Other varieties may be added in the maximum percentage of 20%.

The product specification indicates in 0.55 grams of oleic acid on 100 grams of oil the allowable limit of total acidity. Under optimal production conditions is normal to achieve values of oleic acid that stand between 0.1% and 0.2%.
